Pizza with the Parents


Pizza's one of those things that I like being able to make at home, especially because it lends itself well to that "whatever's in the fridge" kind of cooking.  These pizzas were a collaboration between me, my brother, and my dad-- pretty much everything but the sausage and cheese is handmade.  We started this by making the dough, which is much simpler than it might seemed; we used a focaccia bread recipe and built off it.  We also made a gluten-free crust for G from a Cup4Cup mix, which worked out fine.  This was a family dinner, so my dad brought up the pizza stones that he uses all the time-- one of the things I actually do miss from the cafe is the built-in stone in the oven!-- so were were able to get great crusts on them. My dad provided a fantastic fresh tomato sauce and the end of this summer's pesto, which combined into a fantastic sauce.

And, of course, there were no leftovers. :D

Greek Salad Chicken

Kind of a weird name for the recipe (which I didn't follow all the way through, because I'm me), but this Greek Salad Chicken is delicious.  I omitted the olives and the lemon zest, and added a leek, but overall, this is a fantastic recipe. 

This method of cooking-- pan-searing and finishing in the oven-- is one of my favorites for keeping meat moist.

We topped this with feta and had  brown rice and broccoli.  The tomatoes are from my dad's garden, as is the fresh oregano, which really makes the chicken as amazing as it is.
